CORNED BEEF HASH & EGGS

Corned beef hash is the breakfast of champions! This dish is sure to please the whole family. Don’t have fresh made corned beef? No problem use the canned version it’s a great substitute.

CORNED BEEF IN A CAN?

It is possible that the mere idea of canned meat will disgust you. I make my own corned beef once or twice a year but the fact remains that canned salted beef is a fabulous option for the outdoors! Especially if you grill it with grated potatoes (hashbrown or rösti style) and finish it with an egg on top. A breakfast that will fill you up and help you get things done!

CORNED BEEF HASH INGREDIENTS

  • Corned Beef – You can make you’re own or buy it in a can. The can version is such a great option if you are out camping!
  • Hash – Take a raw potato and use a cheese grater to grate it over the meat. I have used boxed grated potatoes, the ones you add water to and drop in your recipe. I have also had hash with cubes potatoes.
  • Toppings – The classic topping would be an egg. A sunny side up egg. Add a few drops of Tabasco and you’re all set!

MAKING CORNED BEEF HASH

First things first, get a nice fire going. In the case of this great breakfast dish you do not need to start your fire 3 hours ahead of time. You are going to be using a grill and a cast iron pan.

I am not going to explain how to make a corned beef. If you have some that you made at home then more power to you! We will go with fresh store bought or the canned version. I have made this recipe more than once with the canned stuff and it’s delicious!

Now for the potatoes. Best option is fresh potatoes. I always have some in my trailer (just so you know, I do not tent camp anymore, been there done that!) and of course always have some at home.

GRATED OR CUBED POTATOES FOR CORNED BEEF HASH?

The main reason I grate my potatoes is speed. The corned beef is already cooked and if you use cubed potatoes rather than grated potatoes it’s gonna take more time to cook! So rather than burn my meat I use grated potatoes. It also mixes better together. So go ahead and grate those spuds!

Of course you’re going to want to do that over the meat.

Fresh potatoes are best but I have used some dehydrated potatoes in a box that I bought at Costco but Costco being what it is it’s never a certainty that you will find them the next time you go!

Get those two ingredients cookin’ in your cast iron pan. You can let them get nice and crispy don’t be shy to use a wooden spatula to bring the bottom part to the top and vice versa.

Once the potatoes are cooked, which is not long by the way, make some fried eggs and add them on top of your meat potato mixture.

Of course you do not have to put a fried egg on top! But that being said I think you would be missing out! I don’t have to mention that the egg doesn’t have to be sunny side up. It can be over easy even scrambled!

Last but not least I like to add some sort of hot sauce on top. My go to hot sauce of choice for most breakfasts is Tobasco. I was lucky enough to get me a bottle of the 150 year anniversary batch which I use for special occasions like this corned beef hash!

CORNED BEEF HASH

Equipment

  • 1 cast iron pan

Ingredients
  

  • 1 tin (340g) corned beef
  • 2 tbsp olive oil
  • 4 peeled patatoes
  • 4-8 eggs
  • Hot sauce for serving

Instructions
 

  • Preheat the pan with olive oil.
  • Chop the corned beef with a knife and transfer to the pan. Let slowly heat up and get crispy edges.
  • Use a cheese grater to grate the potatoes directly above the pan, integrating with the beef as you go.
  • Let grill. Use a spatula to flatten the beef and hash. If the pan becomes too dry, add a little oil. Turn with the spatula, one section at a time and let it grill for a few minutes while keeping an eye. When the grated potatoes and corned beef look well grilled almost evenly, set aside, scrape the pan with a wooden spoon and pour the rest of the olive oil.
  • Fry the eggs the way you like it! Either sunny side up or over easy. Plate the corned beef and place the eggs on top.
  • For those who like it hot you can add a few dabs of hot sauce of your choice. Personnaly, I like Tabasco.
